Right amount of trinity?

About to start my gumbo and used too much Guidry mix last time. Can’t remember how much I did last time but it was too much.
I use 3 32oz chicken stocks
2 rotisserie chickens boiled after deboning
3-4 links of sausage

To answer your question, one to one and half Guidry’s would get that done. You may need some water. But, as stated above, fresh chopped is best. I cheat sometimes too though.

Would explain further, 3 small onions, or two med/large.
Add two tbsp garlic after the other veggies cook down, and when you smell cooked garlic (floral), add stock.
ETA: would ask first did you sweat/ cook the guidry's down before adding stock? One Guidry's would get the job done, but two shouldn't have ruined your gumbo, unless it was raw veggies?
