I'm pre cooking eggplant dressing (rice, ground beef, green onion sausage, eggplant, etc) to bring to my mom's for Christmas. The oven is going to be full...I feel like I could reheat it in the crock pot, maybe add a little water and stir it every so often.
Anyone done this before?

Think you might end up with mushy rice.

Undercook your rice just a bit and you might be alright.

Could you bake it at your house and bring it in an insulated bag or ice chest to keep warm until serving time?

No, I'm staying at a hotel the day before, going to their house Christmas morning morning. I need to cook it Saturday and reheat it Tuesday for lunch.
