Rib and Fig day!

Made some strawberry chipotle jalapeño fig jam from some figs we froze earlier in August. Also put a large rack on the Traeger at 08:00. Decided to use the jam to wipe the ribs. Took them off at 16:00. Just wanted to share!

What temp were you cooking at for it to take 8 hours? Also, got a recipe and process for that jam?

The ribs were crazy thick. Set my Traeger on smoke for two hours then 180 for 5.5 hours and 300 for 30 mins while wiping with the jam. I’ll post a recipe for the jam tomorrow. It’s easy and has every element of flavor mentioned. First the smoked chipotle comes in, then the sweets of the fruit with the jalapeños on back end.
