Reverse sear on rack of lamb?

my wife prefers oven @450 for 10min then drop to 300 for 10-15min more

I've never sous vide'd them personally
If you cook 15 min at 300 after the 10min at 450 it comes out a perfect med rare

I build a fire on one side of my Weber kettle grill and put the racks on the cool/indirect side. One or two pieces of cherry wood add flavor and color.
They slowly come up to about 125,and then I’ll put them over the coals for a minute if needed, but it’s usually not. They roast and get good color even indirect.
