Random question but Reginelli’s used to have an appetizer on their menu that was basically roasted garlic spread and roasted red peppers on toasted bread. They’ve since pulled it off the menu. Anyone have a copycat recipe or a variation they’d be willing to share?

Try this one. Melted garlic

I smash a clove or two on the bread, drizzle some oil then toast. Great flavors. It’s a great drizzle for pizza as well.

I make a garlic spread every few months. Put whole peeled garlic, drizzle with olive oil, sprinkle with dried basil and oregano in an aluminum foil pouch. Baked in the oven at 400 degrees until garlic is soft. Toss in a food processor and pulse while adding balsamic vinegar and grated Parmesan cheese. Salt and pepper to taste. Spread on toasted bread.

They simply roast garlic in loads of olive oil in hotel pans and then smash it up. Do it in the oven and keep testing it until it’s done

Their roasted red peppers come from a can
