Red and Mangrove Snapper recipes

Anybody got anything good? Late Saturday afternoon in Grand Isle was glorious so I got a freezer full now. Normally just do blackened or on the grill but looking to experiment a little.

I did a Red Snapper Veracruz that was awesome. Mine was similar to this but I baked it wrapped in foil instead of uncovered. Very good!

Pan fried with lemon butter sauce. This is by far the best mangrove recipe I have tried. It sounds fancy but is really simple. Make the sauce first with any side dishes and then cook the fish. Serve immediately that’s the key.

Fresh Red Snapper is terrific raw with soy sauce. I could eat two big filets.

Both make excellent tacos
Below are base recipes we use, pretty sure we don’t do chili powder or oregano
Slaw is excellent IMO
Mahi-Mahi Tacos – (adapted from Weber’s Way to Grill)
2 Filets Mahi-Mahi
3 tbs vegetable oil
1/2 tsp spicy chili powder
1/2 tsp cumin
1/2 tsp salt
1/4 tsp cayenne
1/4 tsp pepper
1/4 tsp chopped cilantro
1/4 tsp oregano
Slaw – (adapted from Weber’s Way to Grill)
1 bag shredded slaw cabbage
1/4 cup mayonnaise
1/4 chopped cilantro
2 tbs fresh lime juice
2 tsp sugar
2 tsp cider vinegar
2 diced chipotle chiles in adobo
1/2 tsp kosher salt
