Recipes using boudin....

I have some boudin coming from home this week and I'm interested in incorporating it in some recipes. I've used it as a stuffing in pork chops , in stuffed bell peppers, and in omelets before. I plan on stuffing poblano peppers batter and deep frying and topping with crawfish ettoufe!! I'd like to hear what ways you guys have used it.

You can stuff it in a boneless chicken, turkey or cornish hen. I like it okay that way, but stuffing peppers with it or just eating it, as is, grilled or smoked is my favorite way because I prefer the flavor of the boudin not to be overrun too much.

You can make boudin balls, also.

Stuff it in a bellpepper. Add bread crumbs on top and broil till crispy.

love it stuffed in a chicken.
At the Road Food Festival, Johnson's had boudin ball sandwiches. They made a boudin ball patty, and put it on a sandwich with a slice of cheese. If you experimentd a little and dressed with a chipotle mayonnaise, pepper jack cheese, lettuce and tomato, you could probably come up with a masterpiece.

I think my boudin chille rellenos topped with ettoufe will be a masterpiece!!!!

Bodin's makes a "boudin crawfish bite". They take boudin, add chopped crawfish tails, make it into a ball, bread it and fry it.

Boudin Casserole is pretty damned good.
Mix a pound of boudin with cream cheese. Layer the bottom of an 8x10 baking dish with a can of flattened crescent rolls and spread the mixture on top of the rolls. Top with another can of crescent rolls. Top with shredded cheese and bake 350 for 25-30.

We have recently started making boudin egg rolls. You can buy egg roll wraps in the produce dept. and just put a little boudin stuffing in each one and fold it up and drop in the fryer. It doesn't take but about 30 seconds to fry.

I bet you could stuff the egg rolls with boudin and chopped crawfish tail meat, similar to the "boudin bite".. and use a sweet and spicy dipping sauce.. and then slap your mama.

Cuchon Butcher posted a pic of today's special sandwich on their facebook page. It's a BBLT, boudin, bacon, lettuce and tomato with a side of cucumber and tomato salad.



Sorry about the size. Can someone tell me how to resize it from facebook so it doesn't knock everyone in the face when they read this post?
