You should have stopped here^ and left it at that because the rest of your post just doesn't make sense.
You won't share a recipe because you think the person you're sharing it with isn't at your skill level. Really? Maybe if you shared the recipe with them, it would force them to learn a new technique and increase their skill level in the process.
The person you share a recipe with won't use the exact same ingredients that you'd use...who cares? Are you afraid they will share your recipe with someone else and blame it on you if the person they share it with isn't happy with how it comes out?
On to the salmon...If you write a proper, detailed recipe, the person using it shouldn't have to guess at how thick or heavy the salmon should be. They won't have to guess at what temp or wood chips/pellets to use. If they cook the salmon too long and dry it out, what difference does it make to you? You planning on eating with them?
If you simply get tired of explaining your recipe to the folks you share it with, write it in great detail as an email and then you can just send it to whoever asks.
I do better than that, I do breadmaking classes, mostly for women's groups, garden clubs etc, bread need a demo to get it right. I get pretty good reviews for my efforts and phone calls when they have a problem.
THe smoked salmon is different, I used to give it out as Christmas presents to clients, but then it took an entire day and a big arse smoker to do just 25. Now I just do it for parties, when a friend wants to know how, he buys a salmon, I come over and we drink while I teach.
A close relative has a catering business in a major city, I do the research, make a recipe in proper portions and he implements. It's fun, he pays me very little, but I'm retired and disabled from an accident, it keeps me busy.
I just don't think giving people a recipe helps a lot, I like reading them, just not following to the T.
Calm down on the vitriol, we all have a different approach.
