Question for people more familiar with sweets and baking

So I've been experimenting with some attempts at making low carb versions of sweets like ice cream
I had moderate success with a chocolate keto ice cream recipe
So my question is, why does it seem like people throw vanilla extract into so many of these recipes when vanilla doesn't really seem to be called for? For example, it was in the chocolate ice cream recipe I made. I omitted and it seems fine. So why the vanilla in everything approach to making sweets?

It rounds out the flavor to be more full.

Kinda like chocolate in chili, among many other things.

It seems to be used in conjunction with chocolate a lot which is a pretty bold flavor

American recipes stick vanillla in practically every sweet thing. It’s boring, to me, and makes everything taste vaguely the same. Leave it out and see how you like it: often, I think it’s totally unnecessary. But its ubiquity signals “dessert” to folks in the US.
If you want to amp up the chocolate flavor, use a better quality chocolate (or cocoa powder)....please be bold and try some other flavors to complement chocolate (coffee, cinnamon, almond, orange to name a few).

I'm thinking in the particular recipe that I was using the vanilla extract may have helped some with texture because of the alcohol content but I could just throw in a splash of vodka or something else to achieve that
