We are doing it in 3 batches. 50# of rice each. So far so good. Using 16 gallons of water per batch.

For our first batch we used 13 gallons of water and it was a little dry (and bland) so our second and third batches were better. For us, using a tilt skillet, we found 16 gallons water to 50 # of rice worked perfect.
The picture I posted was from when we had just added the rice and most of it was on the bottom. Had to keep temp low and stir like I was making a roux for about 5 minutes or it would start to stick, after 5 minutes we covered and let it sit.
Not trying to post a jambalaya recipe for yall since most of you are better at this that I am but a batch for us had 50# andouille sausage, 30# pecan smoked chicken, a jar of better than bullion chicken base, a can of Tonys (the one that is larger than a tall boy beer), 50# rice, and extra salt, black, white and cayenne pepper, and garlic powder.
The church people liked it. It may not have been up to Louisianan standards but it was pretty good. Better than I have had in our local restaurants, but that isnt saying much.
I appreciate the responses. Yall helped us get it as good as some Alabama guys can do.
Hopefully hurricane season is over and yall wont have a need for us (Here to Serve) to come see yall anytime soon.

Huh???? I use this ratio for 5 gallon, 10 gallon, 15 gallon, 20 gallon, 30 gallon, and 80 gallon pots. It works just fine. Never had an issue.

I didnt put them in there. Another one of our guys said it needed some.
We gave him Hell about it but the damage was done. Guess I should not have left him alone with the pot. But it was just 1 can (#10). I told him someone would notice and say something about it.
One of our local cops who was on duty at the event asked about them ... he was from Houma originally. He just shook his head.
You will notice that the ingredients I listed did not contain any damn tomatoes.
