Pulled Pork Tacos with Roased Chile Avocado Suace & Pickled Onion

Had some leftover pulled pork in the freezer so I decided to make some tacos. Pickled some onions and made this roasted chile and avocado sauce. Topped with some cilantro and queso fresco.

3 Anaheim chile peppers, each about 6 inches long
1 ripe Hass avocado, coarsely chopped
¼ cup sour cream
¼ cup mayonnaise
2 tablespoons roughly chopped fresh dill
1 large garlic clove, coarsely chopped
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Blister the peppers on a grill or in a skillet. You can peel the skin on the peppers or leave them on. Doesn't really matter. Chop and remove the seeds. Put in a food processor with remaining ingredients.
