I’ve yet to do it in red beans, but I’ve done it in the last couple pots of white beans I did. It comes out awesome. It tastes like turkey necks and white beans without the bones.

I talking about adding the pulled pork after sautéing the onions/peppers, cooking the beans with the pork boiling the entire time.

If I am doing white or red beans I’ll cut the butt in half and pull half and chop the other half for beans.

Use pickled pork in every pot of beans I do.

Never a butt or shoulder, but ham hocks will easily shred/pull if that's the texture you want.

I use pork shanks and shrimp in my white beans

Red beans I just stick with smoked sausage but I have a buddy that uses fresh sausage in his and it’s excellent.

I do something similar when I've got leftover pulled pork but with black beans. I sautee onions, peppers and garlic. Put a couple cans of black beans with some Saizon de Goya. Once its cooked down I throw in the pulled pork.
