Pretty sure I made an arse of myself today...

I haven't had a Prime steak in a long while. None of the stores I grocery shop at carry Prime (Publix, Kroger, Sam's). Went to a local butcher shop that opened recently and they had some Prime ribeyes so I snagged a couple.
As I'm checking out, dude tells me they were packed (cryovac) back on 2/15 but they're usually good for 15 days. Says they may smell a little funky but to just let them breathe for 30-45 minutes and, if you notice a little bit of slime on them, just wipe it off with a moist paper towel.
Hesitantly, I walk out the door. Realizing today was 15 days from packing date while driving away, I turned around, went in, told him I wasn't going to pay this much for some Prime beef on its expiration date. The butcher did not relent or sympathize as much as I expected. He assured me they're safe to eat and how he had one in the case that was packed nearly 90 days ago. We worked out an agreement where if I wasn't satisfied, I could come back, tell him, and we'd work out some store credit.
I get home to do some Googling and realize these are wet aged steaks. If he'd told me that, I would've never gone back to complain. I'd heard of wet aging but was unfamiliar with the process so had no clue that's what I was buying.
They're in a water bath now so I guess we'll see how they turn out. Nonetheless, pretty sure dude was shaking his head when I walked out the door

Don’t sweat it - he should’ve explained it better. The average customer doesn’t know much about that stuff.

Maybe but he will take your money next time you go in there. Don’t sweat it and let us know how the steaks comeout.

Love wet aged. Hate dry aged.

Not sure if it was the meat quality or the wet aging, but it turned out delicious. They were only 12oz steaks and I misjudged the searing time based on thickness....pushed them to the medium side of medium rare like an idiot. Still plenty of juices and tenderness but it seems I really have no other choice than to try cooking them again to really judge them properly...at least that's what I'll tell the wife
