I live in NC. It is hard finding Camellia beans. I have found that there is actually a difference in the -creamery delicious roux part of RBNRice- if you don't use these beans.

Goya red kidney beans work just fine. Should be in the Mexican food section

Glad you enjoyed the red beans. I think the rotel makes it better. It gives it a tiny kick that is subtle.

I diverted your recipe and added ham pieces. I will not do that again it was almost too salty.
I did in the very end- boil about 8 minutes longer- (always going for that even CREAMier roux) and all of it started sticking. So your recipes timing is ideal.
