Tried this today in my InstantPot it is delish. Only suggestion is thickening up the gravy a bit more with double the flour and butter. I made the flour and butter on the stove, mixed it in and cooked for 20 more minutes in the pressure cooker and the roast was falling off the bone. Also: no need to strain the gravy...

I would suggest if the pork roast is closer to 5lbs that you would want to extend the PC. I have 90 mins on 5lbs.

Excellent suggestion. I cooked it for an hour and 20 minutes total. I would also suggest adding a few packets of onion gravy vs. the roux for thickening. The onion gravy packets are great with the apple breakdown of the gravy.
