Does anyone have a good go to recipe for this? Mine never comes out good. Just got back from Cabo and had some AMAZING pozole so now wanna try it again. This is the best I could find off the net

First, I was going to ask green or red but you linked a red.

Is this the recipe you follow?

One thing that sticks out to me is that the ingredients for the "salsa" are toasted in a dry pan and steeped in water.

The reason this caught my attention has to do with the difference between flavor and aroma compounds and their solubility.

The quick way to understand this is,

FLAVOR = Bitter, Salty, Sour, Sweet, Umami

Aroma = Smokey, Fruity, Grassy, Citrus, Tangy, etc...

Flavor compounds are water soluble, Aroma compounds are alcohol and fat soluble.

So, instead of following the directions in the recipe, try frying the salsa ingredients in minimal oil over moderate heat and then processing them in a blender with the cooking oil.

The difference is remarkable.

Trying this recipe today. We'll see how it turns out. Smells good so far.
