Made some biscuits, Hollandaise, and poached some eggs to go along with the leftover ham from lunch

Did after the boil omelettes and various things for Easter brunch today. Dinner is beef tenderloin and crawfish étouffee. Sam’s sells these trussed up Prime beef tenderloin tails for $14/ lb. They are hard to beat

I cut off the bones. Dry brine for 24 hours. Coarse black pepper. Roasted at 200 until an internal temperature reaches 120. Rest, covered for about 30 minutes. Finished under the broiler for about 5 minutes.

Wish my broiler was hotter.

Just the wife and I so got Zea to go.

Tenderloin with mushroom demi
Corn grits
Braised cabbage
Mashed sweet potatoes
Caesar salad

Not a bad Easter meal during these times.
