Pork Sirloin roast ideas?

I ended up with a 7-8 inch cut of the pork sirloin.

I’ve vacuum sealed it with garlic, soy, mustard and pepper.

What should I do with this thing?

*Besides throw it in the trash

I love that cut. Bone or no? I like the bone-in one better, though it is rare to find. I rub it with onion powder, dry mustard, minced garlic, and whatever dry herbs you like. Fast smoke indirect on a wood fire until done, and I use the sauce from this recipe sometimes because it's easy and awesome. It is fun to cut it off the bone, but I like butchering things so I see it as a challenge (after cooking). I debone then slice to serve.

Do you have an immersion cooker? Sous vide it then finish on the grill. Should be great.

Not if treated right. A lot of the bigger cuts of pork dry out when thrown in the oven or grill because by the time you get to the right internal temp in the center the edges have been nuked. if you sous vide or reverse sear it they're great. Could also slice in to smaller chops.

Used to have an Anova and it malfunctioned while cooking a whole backstrap…..essentially boiling it to a hard rock.

Threw it out.

What about a pressure cook? Or should I just use the oven on low heat then seat? Or smoke it to 155 on the grill?

The ones I've done were not dry at all, but like I said I've done bone in. Just use that meat thermometer. Inject if you want, I've done that too.
