Pork chops in small jambalaya

Anyone ever used pork chops in jambalaya? I'm having trouble even finding Boston butt at the store right now let along temple meat

It will be terrible compared to Boston butt. They are too dry. Look for country style ribs, which are simply Boston butt sliced.

I’ve never had an issue finding butts, try another grocer.

Wife found a tenderloin in my freezer... may try that out if I can find spare ribs. Just left rouses and didn't see crap

I buy whole pork loins and use the trimmings and darker/fatty pieces for jambalaya.
