I've finally moved into our new place and am getting setup here. The wife wants me to start making bacon again and I wonder if any of you on the northshore have a good source for whole pork belly. I used to buy at Costco, but I am not commuting to the CBD anymore and am not interested in driving to BR or NOLA to get them.

I get mine at the Robert Market in Robert, La. The meat managers name is Brad. You have to buy a case (approx. 35lbs.)but you can order them skin-on or skin-off.
Last year I got all skin- on, this year I got skinless and don't think the quality was a good as the skin-on. Also I like to cook braised belly with the skin on.
I would normally be willing to split a case with you but I have a freezer full of sliced bacon and several smoked slabs ready to be sliced.
FYI they also sell Hanks of sausage casings, cure #1 and some seasonings.
Last time I was there they also had some Prime Steaks!!

Covey Rise has had them at their pop ups. Usually in Covington on Wednesdays & Saturdays. They post their schedule on social media every week.
