Had a buddy give me a pheasant. Was going to smoke it on the egg but not really sure if that is the best route. Anyone with some good suggestions on what to do with it ?

Wild or pen raised bird? Wild birds have very little fat. Think gumbo, smothered in a gravy or fried. Cut into strips and fry the breast and legs, it is excellent.

The only way I've ever had it was fried and smothered in gravy. It was really good

The Outdoor Board might have some recipes for you as well

I like to take wild pheasant breast and cut them into strips and marinate them for a few hours in an Asian inspired sauce. soy sauce, sugar, garlic, ginger, lime zest, cilantro etc etc.

Then i put the strips on skewers and grill them super hot and fast on the pit with some type of siracha honey dipping sauce. It's spectacular!
