Had this when we were down in BR for the beat down in one of the RV parks. I would like to try the "hometown" version vs what you find on the interweb. Anyone got their grandmas recipe they's like to share?

take any jambalaya recipe and swap out the rice for noodles. you can be more lenient on the water.
search Poche’s jambalaya recipe on here

their grandmas recipe
Nobody's Grandmother has a recipe as it is a relatively "new" twist on an old standard. So, like JMH said above find a good Jambalaya recipe and sub the noodles.

you dont have to cook the noodles like you do rice. put the noodles in and bring it back to a boil, cover it and kill the heat. let it sit about 45 minutes, the noodles will absorb everything

Do not put as much salt for pasta as you do for rice.
This will only make sense after you finish cooking.
