parsnips—anyone else a fan?

So where have parsnips been all of my life? I feel like the parsnip might be the kale of the next decade. Sweet, mineraly, delicious...I keep roasting them on a sheet pan w/carrots, or by themselves. Anyone have a favorite parsnip recipe? Thx for sharing.

I really like simmering them in some salted water and then when they get crumbly pureeing them with a bit of that poaching liquid, a knob of butter, maybe some milk or cream. Think it might be even better than mashed potatoes

I love parsnips. I put them in stews (like I would Carrots). I roast them with beets, sweet potatoes and carrots.


That pureeing recipe above sounds really good.

BO, Ive roasted then puréed, but I haven’t tried wet cooking. Have also tossed them, diced, into a defrosted beef/veggie soup that needed fluffing up.
