Parrain’s BBQ Drum

Took a client to eat there last night. I ordered the BBQ drum and it was phenomenal. I don’t know if I caught them on an exceptional night or what but I would love to know how to prepare that at home. I could eat that fish I had last night 3-4 times a week. The seasoning was good, portion size was perfect. Does anyone know how to cook that drum like they do? TIA

I like ordering it and have them cook it with the sauce they use on their chargrilled oysters. Fantastic.

The Andouille Encrusted Fish is also a great entree. One of my favorites.

I know right that fish was good. Wish I knew how to cook it like they do. I catch drum all the time but I can’t cook mine anywhere near as good as they do theirs.

They have several outstanding fish dishes. The Vermillion and Maurepas are great too, in addition to those already mentioned.

I can get the recipe for u I think. Might take a few days but ill report back with some inside info hopefully
