That will depend on whether you're using gas, electric, or induction...and if gas, the BTU output of your burners.
For me, I've found keeping the gas burner on just past the middle setting gives a nice sear without burning the steak and oil/ghee. My burners put out some serious BTUs though.

Mine is electric. I guess i'll just have to keep playing with it. Just recently really started getting into cooking. Did a sous vide steak last week and it went fine, but I definitely had the pan way too hot. Oil started smoking bad right when I put it in the pan and was way too hot to get a good sear without burning. Everyone always says high heat, so I put it on the high setting
