Oyster dressing recipe?

We went out for Thanksgiving lunch and had delicious oyster dressing. Does anyone have a great recipe to share?

Youtube has plenty and so does Pintrest. Not trying to be a jerk, but you can find great recipes on both platforms.

2 sleeves saltines
1 1/2 sticks of butter melted
2 pints oysters.
1/4 cup oyster liquor
1/3 cup heavy cream

Mix the butter and crackers together. mix the liquor and cream together. Put some cracker mix down, then half the oysters, then pour half the liquid on top. Put half the remaining cracker mix then the remaining oysters, and the rest of the liquid. Top with the rest of the cracker mix, bake at 400 until a toothpick comes out clean.


You can add on to that if you want. Parsley, Trinity, etc can be mixed with the crumbs.

I get lots of recipes online but when I make something new for a special occasion I'd rather personal recommendations. I'm sure there are good oyster dressing recipes all over the country but (no offense) I'm more interested in recipes with Louisiana flair.

Here's the recipe from River Roads Cookbook, Vol. 2 I believe. Excuse the uneven spacing, can't figure out tabs...

OYSTER DRESSING
½ cup butter____________________Salt
2 large onions, chopped_________Pepper
½ cup chopped celery____________Pinch basil
4 slices bread__________________Pinch sage
Water___________________________Pinch thyme
1 egg, beaten___________________Pinch marjoram
2 tablespoons chopped parsley___Bread crumbs (optional)
1 pint oysters, drained_________Butter

Melt butter in a 10-inch skillet, then sauté onions and celery until transparent. Soak the bread in water. Drain and squeeze water out of bread. Tear into small pieces, then add to the onion mixture. Add egg, parsley and oysters. Season with salt, pepper and spices to taste.
Simmer until oysters begin to curl. If mixture is soggy, add bread crumbs. It should be very moist, but there should be no excess liquid.

Turn into a 2-quart casserole and dot with margarine. Bake at 350 degrees for about 30 minutes.

This can be made a day ahead, refrigerated and then baked for 45 minutes.
