I brown the flour in the oven without oil, then store in the freezer and use as needed for gumbo.
Lately I've found a source to buy it pre-browned sealed in 1 1/2 cup plastic bags, which simplifies roux making even more.
When I need a roux I jus heat oil in a pot and add the browned flour. Takes about 7 minutes.
To me, making a roux the old way is a waste of time and adds nothing to the final product quality.
