It is unequivocally, the smashburger. Bacon, grilled onions, toasted buns.

Burgers are the obvious, but boneless skin-on chicken thighs are amazing.

Whatever seasoning you prefer, usually a BBQ rub of some sort, oil up the griddle and cook skin down until the skin gets crispy then flip until cooked all the way through. I don't really track the exact cooking time, just go by feel.

I usually buy bone-in, skin-on thighs and de-bone myself.



ETA: Also works well with chicken breasts, get them boneless and cut in half long ways to create two cutlets... season, oil, and cook. They come out much juicier than if you were to just bake or grill them.
