Olive Oil dip for bread

I am serving a loaf of french bread (shaped like a gator, ordered from Cake Palace) at the tailgate tomorrow. What is a good slopping dip made from Olive Oil? Any spices to add to it?

Ruffino's used to be olive oil, garlic, black pepper and a splash of balsamic vinegar. good stuff!

oil, basalmic, fresh garlic, fresh shredded cheese, red pepper flakes.
Any variation of that does good. Since you aren't cooking with it go with extra virgin olive oil.

all good ideas above...just make sure you buy a good evo...cold pressed...the darker green the better and a good balsamic vinegar well aged...you will pretty much get what you pay for on these items...I always like fresh herbs for this...basil, oregano....prepare in advance and give the herbs and garlic time to marry.

at ruffinos we did good evo, basalmic ( not too much) and good grated parmasian cheese and some roasted garlic. people loved it
