Smoke imbedded in the meat is the difference .. texture is the same.

Borrow someone’s pellet grill first and give it a run.

And yep, lower temp creates more smoke. I think both pellets and wood turns into ash lol.

I know the pellets are compressed sawdust, but I don't know what is bonding it. Plus the pellets aren't the primary heat source.

I suggest you look it up as your intel is not accurate.

And the pellets are the heat source. No bonding. The pellets people use to heat their house have chemicals in it.

Also google pellet grill’s used in competition.

As an example, a thread from one of my bbq resources

These peeps at least are not trolling for up votes to keep themselves amused.

So the temperature settings adjust the amount of pellets being burned? Is that how temps are maintained?
I have an electric smoker as well, it has and adjustable heating element that maintains the heat, as well as supplying heat to get the wood chips smoldering. I assumed that this was also how a pellet smoker maintained cooking temps.

You’re misinformed. Like he said, some research may help you in your decision.

Pellet makers have a very tiny heat element that is used to light the pellets, which are fed into and congregate in a fire box. They are fed at different speeds to get your desired beat and smoke. But the pellets burning is your heat source, not the tiny element.

Heat is probably circulated more in any sort of smoker that has a fan vs any smoker that doesn’t have a fan. Most pellet smokers have a fan.

Link suggesting I said other grills don’t, especially ones controlled by airflow.

Obviously I haven't done enough research.

So typically, how much pellets would you use to smoke an 8lb pork butt?

The lower your temp, the less you use. So it depends. What temp would you be cooking at?

You can get 20lb bags for 10 bucks.

Pellets are cheap, least thing to worry about. I either go to Costco for a 40lb bag or Academy. Costco=13, Academy = 16, competition blend

I use to love using a stick burner, but didn’t like the effort. I switched to electric years ago and then moved on to pellet searching for more of stick like taste. I finally ended up with a gravity series smoker. As easy as electric and pellet, but far closer in taste to stick.

I recommend looking at a Masterbuilt 800 or 1050. 800 comes with a griddle, they make a griddle for the 1050. If you wait til October, you can get them for like $350-400 at end of season clearances.
