NOLA Style S&G Recipe

I make a decent shrimp and grits but want to prepare a bit more of a suped version next week. I've been to several restaurants where there's like a gravy on the dish, and it just takes it to the next level. Found the recipe below, supposedly copying a place called Pascale's, and curious if this looks legit to you cooks from LA.
Ingredients
Grits
1 cup stone-ground grits
2 cups water
2 cups whole milk
1 cup shredded Romano Cheese
Shrimp
1 tablespoon butter for sauteing shrimp heads
2 pounds large shrimp heads on are preferred
1/4 pound butter
1 tablespoon minced garlic
2 tablespoons Worcestershire sauce
1/2 cup beer Budweiser, Abita, or other light tasting beer
1 tablespoons cajun seasoning like Slap Ya Mamma
1 teaspoon crab, shrimp & crawfish boil
1/2 teaspoon thyme leaves
1/8 teaspoon oregano
1/2 teaspoon rosemary leaves crushed
5 tablespoons butter for finishing dish

I've never really thought about it, but yeah, I guess bbq shrimp and grits is the Nola version of shrimp and grits. Count me as a huge fan.

Don’t forget the best part is mopping up the butter sauce with a hunk of crispy French bread

That does look good. But I’d substitute the water in the grits for chicken broth. Then, instead of sautéing the heads in butter, dice up 6-7 pieces of bacon and fry crispy. Remove bacon and use bacon fat to sauté heads. Return diced bacon to skillet when shrimp are added.
