I’ve owned a Akron char-grill for 4 years now. I’ve enjoyed it, it’s been fun. I came home yesterday to find a large BGE on my back porch nestled in a BGE table. My wonderful wife surprised me for my 40th birthday. I’m super stoked!! So what should be my first cook? I know I’ve got to keep the temp below 300-350. Also, it came with the deflector plate, what other accessories are an absolute must have?

I'd roll with some ribs if I were you.

The process of airflow to control the temp you want does not change. So 250 or so for a butt is still that. Being able to stabilize a temp and let it go overnight for something like a brisket will make you happy.
