I agree. It will probably be an unpopular opinion here, but I let my smoker run at the temp it’s most comfortable at. I gauge the “doneness” of my brisket on how smooth it probes. The probe should glide right in and out like soft butter. Not grabbing or catching on the probe.

I don't use it on what they are made for, I use it with a solid state relay to control an electric. I really need to move to a pellet. I still kick myself for buying this thing. It's not a bad smoker, it's just not a good pellet quality like a Yoder or something better that I should of bought. I hadn't really seen or tried too many pellets when I bought it though.

Yes. I have a instant probe thermometer, the two (one for ambient, one for the meat) on my DigiQ, and a separate dual-probe Maverick. All three have recently been checked using the boiling water method. Part of my spring smoking tuneup routine.

DigiQ has a probe that clips to the grate. Also had my Maverick running just to validate it was working. Both probes were within 2 degrees of each other the entire time.

Because the stall didn't start until 170. As I said, briskets are ornery critters.
