it always blew my mind the audacity of people who serve themselves free food, get a ladle, then DRAIN the broth out before plopping a pound of shrimp or chicken/sausage in their bowl

Seems like cooking that much roux could be problematic. I could see myself burning it pretty easy. Maybe you could contact one of those Roux in a jar companies and see if they will donate 10 gallons...being it's for a fundraiser. They might be able to hook you up, or at least give you a great price.

What fundraiser is happening the last weekend of January in West Monroe? I'd like to be able to come back and give the board an unbiased opinion of your efforts.
