Need help - Deer Sausage

Long story short, my FIL bagged a deer in Colorado this weekend, but misplaced the tag for it. Local butchers won't process it, so I offered to help him make about 50# of sausage.

I'm looking to make two versions, an andouille and a more standard smoked sausage variety. I've only ever made pork sausage, so I know we'll need to throw in some pork fat with it. Looking for some tips on seasoning the sausage if you don't mind!

I haven’t used it, but I’ve used plenty of his other recipes with great results.

Order some smoked sausage seasoning from Rebel butcher supply and take the guess work out of it.

Look up Targil’s Art’s #3 sausage seasoning. You can have it shipped from Opelousas and the sausage will be great!
