Need a peas in a roux recipe

I make a dark roux of about 1 tablespoon flour/bacon grease, then add a can of leSuere peas with mushrooms.

I was amazed when my mom told me how easy it was when I started cooking as an adult. I grew up eating roux peas and thought it was a complex gravy recipe. But it as simple as making a roux and dumping a can of peas into it.

Roux peas over dirty rice is my death row final meal.

Ive never heard of this, but it sounds great. I like the “Lesser” peas already, and this sounds like a nice way to jazz them up.

That sounds damn good, almost like a twist on the Caribbean jerk rice.

You ever put bacon or some sort of meat in it?

My mom would put in a few boiled eggs. I do the same.
I could make a meal of just dirty rice and peas in a roux.

Love peas in a roux way I do it is make a roux cool it with a fine chopped onion and a bit of garlic dump in peas juice and all they are very good I also like peas with like half a stick of butter heated together and thickened with corn starch I also add a spoon of sugar or a spoon of cane syrup

I made it last night with this recipe from the Raised on Roux blog. It was pretty good. Saw a similar nola.com recipe that used sugar, but I passed on that; not a fan of sugar in savory dishes.

Don’t drain the peas. The liquid from the can mixed with the roux makes the “gravy”.

My gramaw made this all the time
Make roux, add onions salt pepper garlic
Add laseur peas with the juice I Use fresh mushroom
I also add a little Sauternes cooking sherry
