To answer the OP - whatever kettle you use, make sure it has a good handle on it like the inner basket of your crawfish pot..sink the kettle into your counter and mount an I-beam on your ceiling with a come along on rollers..
Similar to this just on a smaller scale:
Use the come-along and the track to hoist the pot and slide it away from the counter for cleaning/pouring..
You can also just use a cable and a few pulleys

Pond has some nice bass and sacs. Biggest I've caught was 4.5. My BIL and FIL have caught 2 that were over 8 lb.
My brother was the contractor. His guys did them. Those were 10x10's. Have 12x12's on the front. The stain was a mixture of 2 colors that I do not remember.

Might want to think about remembering. Those beams will need refinishing every couple years.
