The way I see it all these craft spirits popping up did not just simply pop open a distillery without mastering their home concoction first. Moonshine diluted becomes vodka, vodka infused becomes Gin. Mash then distilled and placed in charred oak barrels becomes whiskey/ bourbon- trying to figure this one out. Rum is made by making a molasses mash. Is this correct? Oh, and each spirit has a different equipment set up from a pot still to a reflux still etc. trying to figure this out as well.

For vodka, the number of plates in the still is major difference between home still and commercial still.
To be called Vodka it must be distilled to 190+ proof which just isnt likely in a home still.
To make liquor at home, like moonshine, you'll be trying to reach more like 160 proof. The lower proof is where the flavor comes from. Barrel aging and carbon filtering is then done to reduce/mellow/alter the fkavor.
Yes rum is distilled from molasses and that makes the wash easier to make since you dont have to convert carbohydrates into sugar before fermenting.

yes and no, you can produce anything with either type of still however reflux is much better suited to produce vodka/gin and a pot is much better suited to produce anything with taste.
Most pot stills are going to max out at around 75-80 ABV which is right where you want to be for whiskey, rum, brandy etc to let some taste as well as smell to pass through, a reflux will let you run up to around 87-90 ABV but the distillate will be clear and should be relatively odorless and tasteless.
It is certainly possible to get much higher ABV from a pot still but it requires multiple distillations and getting a lower ABV from a reflux requires a big of change-up to the equipment and a bit of skill.

What most refer to as moonshine is produced at +/-150 proof, vodka is produced at much higher ABV.

Easy with the old, several older black gents from a backwoods community drug their leg from it when I was a bit younger.
