Meyer lemon ice cream.....anyone try this? Recipes?

Picked about 40# from tree last week, now juicing and freezing a bunch....other than lemon pie, what kind of treats can I create?

I made a Meyer Lemon-Buttermilk ice cream last year that turned out great.

I checked, but I can't find it. I may not have written it down. Here's what I remember. This uses no eggs.

Ingredients:

2/3 cup milk
1/2 cup buttermilk
1/3 cup Meyer lemon juice
2 cups cream (I'd suggest regular whipping cream over heavy whipping cream since the buttermilk is so thick, but you can use either)
3/4 cup sugar
1 teaspoon vanilla extract


Directions:

1. Heat the sugar and the lemon juice together to make a syrup. Bring it to a boil, then let it cool to room temperature. This is an important step and will help with the texture of the ice cream since the buttermilk can make the texture kind of chalky.

2. Add the milk, buttermilk, and the vanilla to the cooled lemon juice/sugar syrup. Stir well.

3. Gently stir in the cream to the mixture.

4. Churn in your ice cream maker. I use a Cuisinart electric machine.

*Makes appx one quart of ice cream.
