Anyone out there tried mayacoba beans? (Yes, I googled, I just wanted some local bean eaters' commentary.). I bought an lb at WalMart; they're pale greenish yellow, plump, about the size of small red beans. Gonna cook 'em with a little onion & bacon, to start.

Use them to make Borracho (Drunken) Beans.

No beer to add to the pot, so no "real" borracho beans....but I did add bay leaf, epazote, some chopped tomato, and a bunch of garlic. Not sure if I'll call it soup or cook it down thick enough to eat over rice. Still simmering.

I cooked the beans to medium thick....will serve prob tomorrow as a souplike dish with cheese quesadillas on the side plus a southwestern bagged slaw from Trader Joe's.

So you have epazote but not beer? You need to get your priorities straight, H.O.

Plenty of liquor, no beer. I have everything from achiote to za'atar, in alpha order, of course.
