Understated ingredients is a bit of a hallmark of Neapolitan style pizza. Piled on toppings throw off the flavor balance of the pie and cause it to be far too heavy to be supported by the physically weak crust.

Anytime I hear someone complain about Neapolitan pizza, I immediately assume they ordered far too many toppings. Nine times out of ten, I'm right.
