What’s the ratio of meat to rice?

Mine works out to about 3 cups of cooked rice to 1lb of uncooked meat.

More importantly, what is the ratio of pork to liver?
My current favorite, Boudin by Jameson, may not have any liver in it. But I always thought it should be about 4 or 5 to 1.

1/2 lb of liver for every 2lbs of pork. I use a little less liver with duck boudin, as the duck meat can carry some of the gamey/ liver taste.

I think use the same ratio for chicken liver, or calf liver for that matter. Pork liver can be hard for me to find and I have used both of the others as a substitute. I preferred chicken liver to calf liver.

i made a small batch a few weeks ago. 1 cup of uncooked rice per pound of meat. I used around 1/2lb of pork liver to 2lb of pork
