Low Carb Casseroles

Been on a low carb diet and have lost 25 lbs but I miss the yummy casseroles this time of year. Anyone have any good low carb casserole recipes?

I don't have a specific recipe but I've made a couple.
Check out R/ketorecipes on reddit. They have some good stuff.
Usually some combination of broccoli chicken and cheese. Can't go wrong IMO.

You can do a green bean casserole. Just mix a couple cans of green beans with a couple of eggs, some freshly chopped garlic, almond meal, Italian seasoning, and a little parm if you do cheese. Bake until the eggs are set. It’s pretty goood.

Take any casserole recipe that calls for mashed potatoes,rice, crackers, bread, or pasta and sub in riced or mashed cauliflower.

Pasta zero is a good substitute for anything with pasta. I can't stand cauliflower, so I miss out on a lot of these dishes on Keto. But during the holidays, I'm eating some of everything and just watching my portions. It worked for Thanksgiving

Zucchini lasagna. Tons of recipes for it out there so you should easily find one that fits your tastes.
I do recommend you have a mandolin to slice the zucchini lengthwise. Doing it with a knife sucks

I love to do cauliflower casserole. Cook your cauliflower and then mash it up a little. Mix in some cream cheese, shredded cheese, bacon, chives and any seasonings you like. Put into a baking dish and top with more cheese and bake. Really good and easy. Kind of resembles a baked potato casserole.

Anything with cauliflower, some kind of squash with lots of cheese and some heavy cream and butter. Top with a blend of parmesan and pork rinds.

-Lightly boil cauliflower florets, drain and let dry out totally.
-Make a cheese sauce. We use a huge chunk of Coastal rugged mature English cheddar cheese (Costco) and mix in several other cheeses for some stringiness and such.
-put drained cauliflower in a baking dish and pour cheese sauce on it
-bake at 375 for 30 minutes
-top with crumbled bacon and green onions after taking it out of the oven
