Looking for a good garfish ball recipe

Was passing through Krotz Springs yesterday, no speeding ticket , so I stopped at Kartchner's and picked up a pack of garfish balls. I've never cooked them before, but ate plenty, mostly lunch plates at church during lent. I know I need to flour them and fry them but what's my steps after that? Thanks!

mix some Hungry Jack's mashed potatoes in with the meat

The best I ever had was at the Blind River Bar during the garfish rodeo.

It looked pretty simple...
the guy ran the gar meat through a grinder, mixed with instant mashed potatoes and fresh cut small pieces of green onions and fried.

I'm sure he threw in a little seasoning too, and they were phenomenal.

The balls are already ground, seasoned, and formed, I just need to fry them. Mainly looking for a good gravy recipe to cook them in.

I have had those. I think Tiny was the cook for those balls. They are great

When I had them, they were fried like you would fry fish and hush puppies.

I've never had them with gravy.
