Let's talk hot tamales in Baton Rouge

Any idea why a well-known restaurant in Baton Rouge asks its customers to pay cash only for its hot tamales? All other items in the restaurant can be paid for with cash, debit or credit card. I can certainly think of one reason why, but if what I am assuming is correct, why so blatant and obvious?
FWIW, the hot tamales they serve are great. I enjoy them. But when we recently went, right after they opened --- within 15 minutes, they attempted to tell us they were sold out ... but later magically found 18 to sell after we said we are leaving (only because we were in the mood for hot tamales).
Assuming that we actually bought the last 18 --- 15 minutes after opening, this seems like a really bad idea. I understand restaurants creating demand and when it's gone, it's gone ... but not 15 minutes after your business opens. Just found that odd.
Seems that the owner knows what she is doing by cooking hot tamales but doesn't perhaps understand the business side of the restaurant?

Maybe they were using your strategy on buying cars against you?
Get him to order something we make more $ off of.
Could they have just said they were sold out, because they hadn’t steamed any up yet and didn’t think you would wait?
Maybe whoever prepares them or if some needed to be picked up from somewhere and that person was on their way to work as you were still there.
Still strange, but maybe they aren’t prepared at the restaurant and don’t want people to know that.
