looks like I won't be making it back there until April at the earliest

Right now it's looking like that'll be about peak crawfish season. A little late this year.

5 lbs for adults
3 lbs for children

Then I add an extra sack on top of that.

i usually do about 7 lbs per person...i have found that is the magic # and depending on how heavy of eaters they are you have some left to peel for your gumbo or what ever when you are done... usually..

I've eaten about 3 sacks so far this year. Checked 500 cages and caught 1 1/2 sacks sat. They were big though.

With my friends I would estimate from 7-9lbs per man, and 5-6 per women. If you want the best recipe to boil 40lbs (1 sack) let me know and I will list everything.

5lbs/person is a general rule. The early season smaller crawfish you can get away with a little less because you get more meat/pound of live crawfish than you do the big ones.

In order:
Fill pot with water just under half way, and add the following before lighting burner..

-5 onions, cut in half
-15 to 20 potatoes, cut in half
-5 lemons, cut and squeezed into water
-2 boxes of salt
-2 bottles of Louisiana Hot Sauce
-1 Lg bottle of Liquid Crab Boil
-1 bag of seasoning (Chackbay if available, if not Louisiana or Atchafalya Gold)
-1 bottle of granulated garlic
-1 bottle of minced onion
-1 bell pepper sliced (must have!)

Light pot until it comes to a boil. Lower heat and add crawfish/crabs.

After crawish/crabs are in add mushrooms, weenies, corn, sausage.

Once it comes to a boil again, let it cook for 6 min. Shut off, take a bag of ice and dump on top.
Let it soak for 15 minutes.

I est. 7 pounds per person at least, if its a small group 10 pounds per person for sure, if not more. Plus always do all the sides, sausage, potatoes (got to get the little creamers, I don't like those big red ones), corn, mushrooms, garlic, onions, etc.
We have a 100 quart pot, I don't like to do more than about 35-40 pounds at a time in it - if we are going to have a lot of people, we have borrowed my in-laws 120 quart and boil bigger sacks.
