I've been doing this recently with Binder french bread in zip lock bags and I can't say I've noticed a difference. It is for sandwiches where I ultimately apply a little heat from the oven before consuming so maybe that helps. On a side note, I think Binder is as good or better than Leidenheimer.

Binder is light years better than the terrible stuff Leidenheimers has become.

You can freeze it

However, if it does goes stale, don't throw it away. Make some homemade croutons and/or bread pudding with it.

What happened to Leidenheimer? I haven't noticed any changes.
