Just wondering about the trend of new restaurants?

Why do they put a loved entree on the menu and then take it off? I understand the diversity of it but hate it as well.
They could make bank, with what works

Thoughts?

Rotating menu offerings keeps the menu fresh and in theory keeps each visit an exciting experience that never gets stale.

I'm confused by what you mean by a "loved" entrée in regards to diversity....

My thoughts are scattered right now honestly.

I know of need an example of an entree from a new restaurant that gave your pallet an orgasmic experience then left it without saying goodbye for an adequate response.

You may be overestimating how many people love the entree. Just because you love it, doesn't mean other people do. So it may not be as popular as you think it is.

Also, it could be a bitch for the kitchen to make, so the owner takes it off the menu before his kitchen staff revolts.

Ingredients may be out of season and can't get the ingredients reliably enough to justify leaving item on menu.

Kind of need to know an example of what entree at a new restaurant made an appearance and then disappeared.
