Japanese knives question.

I am going to Tokyo in about two weeks. I want to pick up some new knives. Any decent brands I should look for? And does anyone know of a good store to go to - that aren't charging tourist prices?

I will probably pick up a couple of knives. I'm not necessarily looking for the most expensive or the most high end. But I am looking for some that I can use for more of a daily use, and then also a couple that are "nicer" to use on occasion.

I’d prob get some hyper specific something that isn’t any “brand” and something you can only get there and prob not find the dude again if you tried.

Yeh…. I’d say the same thing. Find local.

You can use chefknivestogo for some info. They have a bunch of japanese bladesmiths that they work with. You can maybe get some ideas…. And or get on their message board.

You can probably get some good info on there. I have a couple knives from their site.

I appreciate the suggestion and will probably go that route. Just wasn't sure if there was something specific I should look for.,

Head on over the Kappa-Bashi Street. This is an area with lots of kitchen stores. There is a huge statue of a mustached white hatted chef so you will know you are in the right area. You can find anything kitchen related you want plus really top quality sushi knives , santoku knives etc.

I actually returned with a knife made by a man who runs a hardware store in Fujinomiya. He has been at it for years and makes and repairs farm tools, makes his own knives and is an expert sharpener. People bring their knives to him from all around. I already had a large santoku knife but so I pickup a smaller one. It might not be as pretty as some (he has some really impressive options) but it gets super sharp and has a super comfortable handle. I was really impressed how important quality was when shopping in Japan. They take it very seriously.



The Japanese steel is different and will discolor/ rust more easily so he recommended washing it right away and never leave it we. But the trade off is you can get a really sharp edge.

Pretty knife. Is that a single or double edged?
(Hope that’s the right terminology, I used to have one that only had one beveled edge, that thing was very sharp)
