Didn't much care for the Kangaroo (first you cook a 'roo), too much fat on the meat.

I love me some "bowie", not sure of the Cajun-French spelling, pronounced boo-wee...an organ meat stew cooked in a brown gravy. Love the heart!

I throw chicken hearts and gizzards in my gumbo!

Never had boudin noir but my mother has an Argentinean friend who makes her own blood sausages, and they are pretty damn good.

you are right...lutefisk is not great......but IMO if you put alot of butter on it and a whole bunch of......I can stomach it
